Would these be interchangeable or are there instances where one of them would be more appropriate?

If your saying "perhaps" or "maybe" then, yes, both words are interchangeable.

Also, it's interesting to note that "quizá" and "quizás" are the same word but vary in spelling.

This is a very interesting topic. The words "quizás", "quizá" and 'tal vez" in Spanish are very used in common speaking. I know that we have a bunch of people in this forum with deep knowledge in Spanish grammar that could possible give us details on this matter
