(ad Lesson 1.13) Shouldn't Paralee introduce herself: "Me llamo Paralee Whitmire y soy tu profesora" instead of "Soy Paralee..." etc? Is "Soy (name)" a right form'

Not necessarily, you can use either form, I do. I just use whatever happens to come out of first.
"Soy Vance...
"Mi nombre es...
"Soy de Mississippi...
Remember Lazarus's rule here with the verb "ser" CID Classify, Identify and Define.

Soy literally means I am. Just as in English it is ok to introduce yourself by saying 'My name is... (I call myself)' or 'I'm...' or many other variations.

Yes,

It means I am

There are 3 ways I know of to say my name in Spanish/Introduce myself

Mi nombre es Eric
= My name is Eric(I call myself Eric)
Me llamo Eric
Soy Eric = I am Eric

P.S. I could never say "Estoy Eric" because I will always be Eric, so you couldent with your name either.
