How would I say I am from?
Would it be Yo son Texas or would it be Yo son de Texas?

Soy de. Son de means they are from.
Everyone else seems to have pretty much covered the whole verb conjugation thing, so it seems that the only thing left for me to add is that, in Spanish, the state is pronounced and often spelled Tejas. According the the RAE, the preferred spelling is Texas, but most people (in Spain, at least) spell it Tejas. People from Mexico or other parts of Latin America might favor the spelling with an 'X', just because they're closer to and come into contact more with the English spelling.
If lit'l ol' you were in fact the Great State of Texas, then, and only then, could you boast:
Yo Soy Texas!
So use Eddy's"
Soy de Texas.
The soy being ist person means you don't need to use the yo unless you really want to stress, I am from Texas!

The influence of English might be a factor in some peoples choice to spell them with 'x' but there is ample precedent for the spelling with an 'x' in 16th century Spanish.
