La diferencia entre "esto" y "este"

There are many ways to say "this": esta, este, éste, esto and "that": esa, ese, ésa, ése, eso

But everytime I use an este, I get a comment that it should be esto and vice versa.

I learned that esta, este, esa, and ese are adjectives while ésta, éste, ésa, and ése are pronouns.

Where do eso and esto fit into the equation?

They are 'neutered'. Whey you're referring to a thought, concept or something of unknown gender, use esto or eso.

Eso and Esto are stand-alone pronouns.

Here is a song my teacher tought me that helps me with knowing when to use Este,esto, estos, estas, ese,esa, Aquel, aquella, or aquellas. It goes. "This and "These" all have "T's" "That and Those are NO SHOWS, FAR AWAY BEGIN WITH AN "A". Hope that helps and wasn't confusing.

eso means that, esto means this, the rest depends on the context: gender, number, etc,... They are all pronouns and you'll find personal pronouns (the ones with the accent) or just pronouns
