My Hispanic Gardeners are "weeding" my flower beds and removing flowers along with the weeds. I'd rather do it myself.

With your gardeners, it's best to be as direct as possible and as simple as possible. I've had this same problem, so I would say, "Oigan jóvenes, por favor, no toquen nada al rededor de las flores. Yo sóla me encargo." A little polite chit-chat after might help them to remember your request as well, plus calling them young will help "seal the deal."
