helado	This is the most widely-used term for ice cream in the Spanish-speaking world.

nieve	You're likely to see ice cream referred to as nieve in Mexico and parts of Central America.
nieve de leche	In Mexico and parts of Central America, this term is used to refer specifically to ice cream made with...cream!
nieve de agua	In Mexico and parts of Central America, this term refers to ice cream made with water, or what we call sorbet in English.
helado de agua	In Argentina and Mexico, you can order a sorbet using this term.
sorbete	This last term will get you an ice-cold sorbet in just about any Spanish-speaking country.
