  • Quiero ir a la tienda, pero no puedo. I want to go to the store, but I cannot.

  • (Él) no es alto sino bajo. He is not tall, but short.

Mas used as but is mostly literary.

  • Quiero ir de compras, mas no tengo dinero. I want to go shopping, but I don't have money.

Usually in speaking, it is "pero" or "sino". These are not interchangeable, though. "Pero" corresponds most closely to the English "but". "Sino" is used when you would say in English "but rather". For example, "The United States is not a small country, but rather it is very large". Los Estados Unidos no es un país pequeño, sino es muy grande.

It depends on the context of the sentence. If the sentence is saying not that BUT this, you want to use ´sino´, otherwise you use pero.

Hope I helped
