what does the name of the town in New Mexico "ojo sarco" mean?
There is a very old town in the mountains of New Mexico by the name of "Ojo Sarco". I know that ojo means spring ( water type) but I cannot find a meaning for Sarco. Any idea?

This answer leads me to suspect you are referring to some place called ojo zarco, which means light blue eye.

so the real meaning is sarco's eye...
I have to disagree here. If it were to translate to "sarco's eye", I think it would have to be "ojo de sarco".

First is Ojo Sarco, believed to be named for a spring in a nearby cañada (glen). The name was sometimes spelled Ojo Zarco; ojo is now translated as "eye" in Spanish, but also used to mean "spring" and zarco means "blue", hence "blue spring".
The reason that the meaning is hard to find, is that they spelled Ojo Zarco incorrectly.
My Spanish speaking students have a hard time with "s" and "z" In Peninsular Spanish there is a difference which is not used in Latin America.
However there is a town in México by the same name, and the Mexicans got it right.
By the way. It means "light blue eye" There could be other regional meanings as well, but this is the basic meaning.
When I lived 14 miles from Ojo Sarco in Embudo, I was told that it translates to "watch eye," having different-colored eyes.
