Hi 
"el pico del pájaro..."? is correct for me.
Like "la pata del perro, el ojo del gato or la boca del cerdo".

Unless it is something I know nothing about, the grammar is wrong. It should be "del".
I've just realised that it is actually possible, if you don't refer to any bird in particular:
¿Quieres probar un pico de pájaro? (assuming that it is edible)
