It depends on whether you are making a straight translation - huesos, or if you are talking about idiom or other uses.

Bones can be dice or dominoes - dados o dominos

Some expressions with bone that would need non-literal translation are:

To make no bones about

Bare bones (of the matter)

Chilled to the bone

I buy aceitunas sin huesos. That is olives with the stones taken out yes fruit stones are called bones here in Spain.

In the US we usally refer to them as pits unless you are in the farming community where the make a difference between stone fruits as apposed to seed fruits. My cousins in England refer to them as stones. - Hungerford, Feb 18, 2011
