Correct me if I'm wrong but doesn't Mi garganta duele properly say my throat hurts in spanish?

No. Doler is an intransitive verb so in Spanish it is usually accompanied by a pronoun to detransitize it. Me duele la garganta. (My throat hurts).

Mi garganta duele looks like a transitive attempt at saying my throat is hurting (something).

Yours is not grammatically wrong, but it's odd. "Me duele la garganta" is better.

Yes that is what I would say I just added the other as an alternative as I have heard it a lot here in spain. - kenwilliams, Dec 9, 2010

No you do not say mi garganta you say la garganta. Me duele la garganta or Tengo dolor de la garganta. Remember body parts take the direct object preposition el, la, los and las.
