How to make tortilla española:

Take about 4 eggs in a bowl - mix it good with chopped onions (and mushrooms if you like).

Take one big half boiled potato and chop it in small dices. Put it in the bowl with the eggs etc. Mix it. Use salt and pepper and some oil also.

Then put all of it in a frying pan and fry it. Use a lid/lock on the pan. You get the best result if you use a pretty small pan, it gives the tortilla some height.

When the eggs are not fluent any more, the tortilla is done!

Cut it in slices and serve!

In Spain an omelette is called a "tortilla". In Mexico, however, if you ask for a "tortilla" you will get the flat corn tortilla that is used for tacos or enchiladas. In Mexico and Venezuela (the only other countries in which I have experienced omelettes), the word is "omleta".

Omeleta? Never heard it before :) I say "tortilla de huevo" but some people say omelet, either way it's understood in Mexico I think. Now, the recipe and ingredients may be different from place to place :P - InésDelRío, Nov 3, 2009

tortilla! a particularly memorable word in Spanish as it has nothing to do with "tortilla" in English. BUT BEWARE: Spanish omelettes are a bit different - they contain potatoes and onions and stuff, so if you're talking about french omelettes you might want to clarify..."tortilla (a la) francesa".
