So I was trying to say Its necessary to reduce the heat halfway through the time it takes to cook (something)
For example:
The risotto(a rice dish) usually takes 30 minutes to fix. Halfway through that process (the process of the risotto cooking or the cooking process) you have to reduce the heat to ensure it doesn't overcook.

I'd rather use 'rápido' or perhaps 'pronto' instead of 'de prisa'.
