tienen una red de lazos atando y sosteniendo la cabeza del toro.
The rodeo helpers manipulate the beast pulling on the ropes;
they had lassoed a web of these ropes around the bull's head.

tienen a este enorme toro negro completamente atado, esperandolo a el.

I changed pinioned to tied in the first couplet since you used amarrado. If you didn't mean tied, then maybe "penned" is better.
In the fourth couplet, I'm unsure what to do with "all pinioned". Pinioned isn't right because that means trapping a birds wings, but I wanted something with a similar sense to the Spanish. Maybe "all tied up" or "tied up in knots".
