I want to say "I'm sorry to hear that" in spanish. Could it be, siento saber eso o siento oir eso. Or maybe some other way.

Saber u oír. When "o" is followed by a word beginning with either "o" or "ho", it changes to "u".

Siento oír eso
Lamento oír eso

Siento saber is also fine, but it means "Sorry to learn of..." or "Sorry to find out about..."

You can also just say ¡Vaya! to express sympathy in some cases. Kind of like "Oh, no!"
