It doesn't seem correct to end the sentence with con. "Es curioso las diferencia lo que buscamos y lo que terminamos con. I wanted to say: "It's curious the difference between what we look for and what we end up with."

It would be fine, but I'd say "al final" instead. Not a big difference, anyway.

Es curioso la diferencia entre lo que buscamos y lo que tenemos al fin.

To me this sounds better, because there is better parallelism between the two "lo que" parts. But then soy gabacho...

In English is a matter of over-correctness, whereas in Spanish is an absolute no-no. If you think you've found this sentence in a Spanish speaking page, its author's Spanish is way below the standard of an uneducated native. A Spanish preposition comes before (pre-) the usual position (-position), not after. (In English it's a different story).
