Thanks so much.
On her application she said that her job was an empacadora, but I wasn't sure if she meant she was a machine operator or a packer.

As Heidita says, it probably refers not to a packer (which is a person), but to a packing machine. It would be parallel to words such as refrigeradora and computadora.
