sonriendo or sonreiendo'''? PLEASE HELP AS SOON AS POSSIBLE

The spanish word for "smiling" is "sonriendo" but shouldn't it be "sonreiendo"
Because when making a spanish word a "ing" word (smiling) you're supposed to remove -ir/-er and add "iendo" but "sonriendo" removes 3 letters instead of 2, WHY''''''''?
I'm so confused.

The verb "sonreír" is irregular, and changes its e to i in certain forms, according to the stress (I won't give you details):

sonrí-o
sonrí-es
sonrí-e
sonre-ímos
sonre-ís
sonrí-en

The present participle does the same:

sonri-iendo

However, that double i always simplifies to a single i (this is a strict rule):

sonri-endo

A similar verb is freír:

frí-o
frí-es
frí-e
fre-ímos
fre-ís
frí-en

fri-iendo -- >; friendo
