“Si es necesario, agregue agua fría para aguarlo.” “Lo” se refiere al gazpacho.

"Aguar" is to make more watery or to make a sauce, etc. less dense.

The solution by Don Bigote looks OK. Aguar is used as a verb meaning to water down or dilute the mixture. Here is another way to say it.

Si es necesario, añade un poco de agua para hacer menos espeso el gazpacho.

If necessary, add a little water to make the gazpacho less thick.
