You could try using Google Translate for this if you want, and if your teacher does not forbid it.
You sentence reads: She is Mexican.
To pluralize it in English:
They are Mexican. or
They are Mexicans.
Try typing both of these in Google Translate and see what you get.
You may get two different answers. If you do, and you don't know which one is best for your situation, post both translations here, and ask when one or the other should be used.
P.S. Since your singular pronoun is "ella", which means "she", if you use a pronoun for "they" you must remember that there are two different pronouns for "they" in Spanish. One is for a group of women and the other is for a group of men or a mixed group of men and women. Since you are pluralizing "she" I would think you should use the one which refers to a group of women, right?
