I attended an event last week where people were saying "mucho gusto" when they were introduced. The people I heard saying this were men. Should I say "mucha gusta" because I am a woman?

No. Mucho gusto means Pleased to meet you. or It is a pleasure to meet you.

It does not change with gender.

Echoline is right. Gusto is a masculine noun, not an adjective, so it is not conjugated for gender.

When we say "mucho gusto" we are really saying a shortened version of something like: Me da mucho gusto conocerte...... (It gives me great pleasure to meet you).
