When we catch salmon, the roe is used to fish. The only place I see roe as food- as caviar in very expensive restaurants (they don't call it roe), or on our sushi, and my wife always tries to avoid that.

Note we only eat wild caught Northwest salmon, not Atlantic farmed.

If you asked for roe here in the South you'd probably get this, fried shad roe. It's not usually available since it's a seasonal thing but it's tasty. It's a pain to cook because it pops a lot and can spatter you with hot oil if you're not careful. The one time I cooked it I had to use the pan lid as a shield!

I know a little about flyfishing, but not about the sort of bait used in sea or course fishing.

I don't think anyone would use roe. Obviously the most expensive is caviar, but if I buy herring they come with the roe hard (hueva) or soft (lecha) depending on the fish.

Of course roe deer is something different (corzo)
