negative uds. commands
How would you do negative uds. commands, would u just add an s to the verb conjugated affirmatively for uds. or would it be adding an s to the affirmatively conjugated ud. verb.
I'm sorry if my explanation is a bit confusing. I guess what I'm trying to ask is:
which one of these would be right?

It's escriban not escribans. No escriban Uds. las respuestas en el examen hasta que empiece el examen. This is correct.
Anything with a letter "s" in the end is the tú form. No escribas tú las respuestas en el examen hasta que empiece el examen.
Here's the link for the conjugation of escribir. Escribir
All negative imperative commands use the same conjugation as present subjunctive. (That is formal commands plus Nosotros, Tu and vosotros)
Positive formal commands plus Nosotros use the same as the negative.
Tu uses the 3rd person indicative/ present tense Vosotros used the infinitive with the r removed and replaced by d.

And here is a guide on Study Spanish which also has units on how to form the subjunctive
In your example they should be the same without the s.
Just use "e" for usted commands, and "en" for ustedes commands for "AR" verbs.
Use "a" for usted commands and "an" for ustedes commands for "er/ir verbs.
BTW, these endings are also OK for affirmative commands.
Your verb "escribir" in the negative command for ustedes is "no escriban."
Many "er/ir" verbs have irregular stems. If interested I can show you how to to them.
