Así vs esto

I was wondering if there was a difference between the ways I say the following examples.

Así es la comida mexicana (this is Mexican food)

But then compared to

Esta es la comida mexicana

Or

Así es como me preparo para una fiesta

Vs

Esto es como me preparo para una fiesta

Is así wrong is these examples or is esto wrong or are they both interchangeable?

Así es la comida mexicana (this is Mexican food, this would be more like approving of the food, not pointing at it)
But then compared to
Esta es la comida mexicana
(you could use this to point at some nearby Mexican food)
If you added exclamation points or said it with enthusiasm it could mean about the same thing as the first sentence.

Así es como me preparo para una fiesta (that is how...) Vs
Esto es como me preparo para una fiesta (this is how)

Normally así means like this or like that, and esto is just this, but esto can be used to refer to a bunch of stuff which was just said or done.

¡Así es! is a short little phrase that is used to show complete agreement with something or why what someone just said. Sort like...yes totally, or that's right, or that's they way it should be. If you start a sentence with así es, it often tends to give a type of approval to what follows. Esto es more matter of fact, unless of course, you said the sentence with real enthusiasm.

así es como lo detuvieron that's how o this is how they arrested him
here it is like saying that is the way they arrested him, just like that.

In your first pair of sentences, I would say they would not be used interchangeably. In the second pair they are quite similar. This is how it's done. That is how I do it!

I suggest you read the dictionary entries for así and esto if you haven't already to get additional feel for how they are used. Or just keep learning good Spanish sentences.

The sooner you can start to read some Spanish stories or watch Spanish TV and movies, the sooner you will start to pick up on subtleties like this.

Also, think about entering one or two of our daily games and start using what you are learning. If you get it wrong, then a native speaker will offer you corrections. You learn best by trying things "in real life" and then learning from your mistakes.

In my opinion I think "así " is to highlight the way to make it / highlight the type

But "ésta" only indicates the object form its position

I like to think of "así" as "thus" or "so then." May not be totally accurate, but it helps me.

!Así" and "esto, este, esta" don't mean the same.
Así means "like this, in this manner, this way, in this way etc. Esto etc mean "this"

Así es la comida mexicana Mexican food is like this.

Esta es la comida mexicana This is Mexican food.

Así es como me preparo para una fiesta This is the way I prepare myself for a party. This is how I prepare myself for a party.

Esto es como me preparo para una fiesta This sentence is wrong. You could say Esta es la manera como me preparo para una fiesta. De esta manera me preparo para una fiesta.

"Así es la comida mexicana" es decir "Thus is Mexican food." If you have two platefuls of different foods side by side and your contrasting one with the other, you would say, "thus". Ah, "This is how we make it." "Thus" can be "therefore": "Thus, you see, the decedent said that before the negative patient outcome."

"Esta es comida mexicana" is a simple statement: "This is Mexican food".

A mí me gusta el té muy caliente. A mi también me gusta así. ( Así means caliente here or the same as above)

Cuando me ve, mira para otro lado.
Así actúan los cobardes. (here así means look the other way)

Yo como la carne bien cocida.
Yo la como así también. (así here means that the person likes the meat "cocida" too.)
