And like for other Spanish nouns

Las estudiantes refers to a group of students, 100% of which are female.

Los estudiantes refers to a group of students, at least one of which is male.

Yes, you can.

La estudiante does mean the female student and el estudiante means the male student.

There are many other nouns like estudiante which you change the gender simply by changing the gender of the article that precedes it. Here are some examples:

El / La recepcionista = The recepionist

El / la policía = The police officer

El / la dentista = the dentist
