When saying "It's 10:45" are all the following scenarios possible?

Son las diez y cuarenta y cinco.

Your third one is incorrect. You can say: Faltan quince(minutos) para las once "Minutos" is optional. There are probably other variations. This one you hear on the radio a lot.

As for which is most common: In Mexico, I hear "Faltan..." most. And I hear "Son las diez cuarenta cinco," without "y." - jtaniel, Jan 20, 2017
