Se me cuida
What does se me cuida translate to in English? My friend told me it translates to 'take care' in Spanish and I don't understand how.

It, indeed, means "Take care". It's a friendly and caring way to depart (just like in English here).
Here's how you can break it down. Cuidarse means "take care of yourself" now conjugate it and add "me" and it means "take care of yourself for me". It means I care. I hope everything is good for you.
"Se me cuida" is the Usted form of this phrase. If you wanted to use it in the "tú" form, you could say "te me cuidas". It's not a command, so it doesn't need to be in the imperative form.
I don't know grammar but in spanish, you may say "take care" in many ways:
Se me cuida.
Cuídate.
Cuídese.
Cuideseme.
Te cuidas.
Se cuida.
Te me cuidas.
These are formal and informal ways, I hope this doesn't confuse you.
Saludos.
