Which know in spanish should I use in the following sentence. I know that the restaurant in downtown is very good.

On account of the adjective, you need sé.
If you want to use conozco, you don't need a second clause. Compare:
- I know that the restaurant in downtown is very good. (= sé que el restaurante en el centro es muy bueno.)
- I know the restaurant in downtown. (= conozco el restaurante en el centro.)
