Can en mean in and of?
I'm just confused about the word "en", I know it means in, but why is "pienso en ti" think of you and not think in/on you?

It can also mean on or by. En casa translates to at home.
Languages evolve and often just use different prepositions so what we learn in our native language sounds strange to someone else.
Many verbs are followed by a preposition:
soñar con = dream of
pensar en = thought about

There are lists of what prepositions are used with which verbs. There is a good list on profe ele's site which I have previously posted.
I do not know your level, but try and learn phrases with prepositions so they sound natural to you.
