¿Cómo está tu profesor de matemáticas?
I'm not quite sure since it has the está in it. Could I just say "Mi profesor de matemáticas está buen."? If not, please answer it correctly. Thank you!

Actually it's "está bien"
I suspect as you have the correct answer you will not look at this again.
However, can you add your level of Spanish and English to your profile so that if you ask or answer another question it is there as a guide?
¿Cómo está ? is asking how someone is meaning health etc - the equivalent greeting in English is how are you [it would be estás if you were greeting a friend] One answer in English is 'well' or 'I am well/fine'
Well is an adverb which translates as bien.
If the question is '¿Cómo es ....? This means what is he like - it can mean appearance or how he teaches. Here the brief answer in English is 'good' in Spanish bueno This is an adjective.
When I started learning Spanish again I had to revise my grammar as you need to know which are verbs, what are adverbs etc.
You will learn that there are two verbs to be in Spanish estar and ser and they can change the meaning of the sentence.
Adjectives agree with the the subject eg bueno [male] buena [female]
Bueno is an adjective that changes its meaning depending whether it is before or after the noun. If it is before a masculine noun it drops the 'o.'
