What does "Cambio de piel" mean? I know literally it would be "change of skin" but how would you use that as a phrase/expression.

"Cambio de piel" is mostly used as a metaphorical phrase to express a significant change in a person, a new way of being. A desire of transformation.

You might want to provide the context in which you saw this expression. It is often critical to a translation to understand the sentence or two that came before as well as the complete sentence in which it was used.

Besides the obvious, "moulting", it could be used to express a change of allegiance, or "waffling".
