Hi Benedicte I have been to Spain a number of times. As you have been told each region has typical dishes. I have stayed in Salamanca where they are proud of their meat. I have been to Galicia where their seafood is popular especially 'pulpo' octopus but in winter it can be cold and wet and they eat a lot of stews and eat 'grelos' In Valencia paella is popular and they grow rice in the area.

I could list food I have eaten in different areas of Spain but it will not help you much. As jubilado says food in Spain has also been influenced by Jewish and Muslim culture. Many of the food words are arabic in origin eg azafrán / saffron

I have heard many dishes from the Canary Islands are popular in the 'New World'

I have been to Mexico where a 'tortilla' is not a dish with eggs but is a type of bread made with corn and 'torta' is a sandwich not a cake. Latin America is a huge area with lots of different traditions. Corn [elote] is very popular in many areas where it is a staple of their diet. Fish as in coastal areas of Spain is also popular. Look up 'mole' and 'tamales' for an idea of food in Mexico.

I remember eating beautiful avocados in Mexico and Peru. The Spanish word 'aguacate' is a nahuatl word - one of the many indigenous languages of Mexico.

Una diferencia importante es que la comida en América latino hay influencias de las indígenas pero en España de los musulmanes y judíos.

Pero sólo adivino y quizá alguien lo dará más ejemplos - supongo que haya muchas differencias.

En España cada región tiene sus especialicades. Lo que comen en Asturias es lo que se come en Andalucía. Y en Madrid, que se encuentra en la región central de España, también es diferente.

Y no hay "comida lationamericana" Cada region de cada país tiene sus platos típicos.

Hay gente aquí de varios países que le puede dar información más específica.
