To "change" someone
How would you say that something has "changed" someone? I don't mean physically, I mean emotionally. Could I just use "le cambió?" I considered using "le conmovió," but that seems to have a more temporary connotation.

I would use cambiar, as you suggest in your first attempt because the changing of someone is done by something else, ie: Tu amor me ha cambiado por lo bueno.
If the changing of a person is not caused directly by an outside force (person "changes himself" although maybe affected by something), then we normally use volver, ie: Me he vuelto bueno por tu amor.
Conmover means to affect someone usually emotionally or spiritually and the person doesn´t necessarily have to change to feel this way, so I wouldn´t use this to indicate a definite change in someone.
Tu amor me ha cambiado. (Ahora soy y pienso diferente gracias a tu amor). Tu amor me ha conmovido. (El amor que sientes por mi o por alguien mas, me causa empatía y me llena de emoción)
