Normalmente, Alex atendía a los clientes hasta el mediodía, y luego le pasaba las riendas a Joyce, al igual que Roger, era una excelente empleada que le sacaba mucho trabajo de encima.

¿Qué significa exactamente "sacar mucho trabajo" en la frase de arriba?
¿Podría alguen explicarme, por favor?

Purely guess- pending work- so something like "used to get through a lot of pending work". But this is such a guess that I will not claim it is an answer- I only put it to stimulate other thoughts. :) - bosquederoble, Feb 18, 2016

Imagine I have a LOT of work to do but I'm very tired. So, a kind person offers to do some of my work for me. Esa persona te está sacando trabajo de encima. They are taking on my responsibilities because, in this case, I'm very tired. Bosquerobl was right. Another phrase that is similar is: sacarse un peso de encima, which I think is a more accurate translation to take a burden/weight off one's shoulders
