¿Por qué se dice "me harté" en vez de "Yo harto"?

The reason for "me harté" is because "hartarse" is a reflexive verb.

I don't know if you are familiar with reflexive verbs or not. If you scroll down to the grammar section at the bottom of the home page and click on it you will be directed to all kinds of grammar help, and reflexive verbs will be part of the help.

Here's an example of one such verb. "levantarse" to get up. If you have a hard time understanding this, then you really need to check out the reflexive verbs in the grammar.
