Se puede usar el verbo try en este contexto?
Yo quiero decir esto: Tratar con gente mayor siempre me pone los pelos de punta.
¿Está bien decir lo siguiente?: Trying with old people always puts my back up.
I don't know how to translate "me pone los pelos de punta" but I think put someone's back up has a similar meaning, I am not sure.

Así como aparece en la traducción ampliada, yo diría: To deal with / To have dealings with ....
Lo de los pelos: .... makes my hair stand on end.
How about "working with"?
I wonder if the word deal has a bad connotation (at least that's what it sounds like to me) What if I wanted to say: Tratar con gente mayor me resulta más fácil que hacerlo con adolescentes.
Would I still use the word deal? Dealing with old people is easier for me than dealing with teens?

I am not sure what you want to say nor to whom. Making your hair stand on end in English means you are shocked or frightened. We have a phrase 'makes me want to tear my hair out' which is explaining frustration or difficulty coping. You can talk about coping with older people/or teenagers/ adolescents but it implies that it is not easy Dealing can be negative as we talk about drug dealing, but in its general sense I don't think it is negative so no reason not to use it.
