So, do Spanish songs have to rhyme or not? And if they do, is it in English or Spanish?

Spanish songs don't have to rhyme, but it is common. There are no universal rules for music.

Of course, because the song is in Spanish, it has to rhyme in Spanish if it is going to rhyme.

Go to the internet and get the lyrics of a popular Spanish song in both Spanish and English. Listen to the song you choose on the internet and this should answer your question.

Ejemplos:

La Bamba

La Isla Bonita (the Glee version)

Guantanamera

Besame
