I heard this line from a song, but I'm not exactly sure what it means

"No me dejes de mirar."

I want to say it means "don't stop looking at me", but I'm not too sure.

Your translation is totally correct. There is another way to say the same:

No dejes de mirarme

This one is more common, but yours is more "poetic".
