Please can you advise, would "mucho gusto" be a less formal a reply than "encantado"?

To my ear it´s not so much a matter of formality but of preference and nuance. Mucho gusto is a very commonly used expression and would also probably used when by someone who is not really interested in being presented to a specific stranger.

Encantado shows true appreciation of meeting a new person and wouldn´t be used when being presented to someone in an unpleasent situation, such as meeting a cop who has bad news about a loved one. This is also a more colorful expression that has more emotional nuance than the other.

Encantado would be nicer because it means delighted.
