In the sentence, me ha pedido que les recuerde. Why is the verb recordar conjugated? And is there a structure to follow so I would know to say or write sentences like this in the future? I'm assuming that the sentence is translated as, he has asked me to remind you all(them). Also, why is the "que" necessary?

The true translation is: He / she has asked me that I remind you all / them.

Most native speakers of English don´t know how to use subjunctive in their own language, so this mood becomes problematic when learning a language that commonly uses it, however, the last clause in the original Spanish phrase is subjunctive and que before the subjunctive verb is common sentence structure. Subjunctive is necessary here because the reminding has not happened.

The French use que before the subjunctive too and I wouldn't be surprised if all the latin based languages do the same. My level of Brazilian Portuguese is much more basic so I havent reached that stage yet lol still, my native teacher will help me learn - FELIZ77, Jan 26, 2015

You are right that most English people don't know how to use the subjunctive! Well, I am hardly surprised because the teaching of English grammar has been neglected in many if not most, schools. I was taught very little of it in an independent school. - FELIZ77, Jan 26, 2015
