Coyote flaco
I know the meaning of Coyote Flaco, but I'm wondering if anyone knows its history. There are so many restaurants with that name I am thinking it must have some connection with a story or a history. Anyone know?

I was intrigued by this question, so I googled it. I found the following about one of the numerous restaurants name Coyote Flaco.
WILLIAMSTOWN -- In a way, Galo Lopez returned to the family business when he opened a Coyote Flaco restaurant in Williamstown in February of 2006. "My brother Luis started with the name," Lopez said in an interview well after my meal there. "He chose the name Coyote Flaco. We're from Ecuador; he moved to the capital and started working for someone out there. Next to the Mexican Embassy to Ecuador there was no mexican food. That's why Coyote.
I still don't really understand how that explains the name, but there you go.
Also, UK pubs are often named with names like that, "The Cow and Ram," "The Red Rooster," "The Canny Man," etc., etc. So to me it sounds like a perfectly reasonable pub name.
