Una pregunta sobre el verbo comenzar
Estoy comenzando comiendo mis enchiladas es similar a decir estoy comenzando a comer mis enchiladas? Puede quitarse la preposición a en este contexto?

Verbs of motion usually have the preposition "a" attached to them.
Comenzar, to me, is a verb of motion. So I say go with: Estoy comenzando a comer .....

transitive verb
- to start, to begin
comenzar diciendo que to start o begin by saying that
intransitive verb
- to start, to begin
comenzar a hacer algo to start doing o to do something
comenzar por hacer algo to begin by doing something
So there is a difference between starting doing something and starting by doing something.
I started eating my enchiladas I started by eating my enchiladas
That being said the first sentence doesn't sound like something I have heard before (two gerundios in a row), so I will have to defer to native speakers or more advanced learners as to whether it is something that they would naturally say.
I can only answer that the a is not used when you follow comenzar with the gerundio but is when it is followed by an infinitive-and there is a difference in meaning between the two ways of doing it.
