Help with phrase "cuando coja algo de temperatura"

Hi, I am listening to a podcast that is describing how to prepare a dish. When the cook is preparing to add an ingredient into the hot pan, he says the following phrase "cuando coja algo de temperatura". My guess is "when you take something from the temperature" which implies "when you reduce the temperature" but am very uncertain. Would appreciate any help. Thanks in advance.

Just the opposite. "When there is a rise in the temperature".
The subject of the verb "coja" is "the food that you're cooking", not "you" (usted form). The sentence would be "Cuando la comida coja algo de temperatura" = "Cuando la temperatura de la comida suba un poco".
