Is those sentence correct?
" Cuando nos hemos estamos ido en París, hemos mirado el montón de casas antiguas y bellísimas alli"
It's meant to say "when we were visiting Paris, we saw the pile of old beautiful houses there." or something.
I'm trying to form a sentence woth pasado perfecto AND gerundio but I am a bit confused as to how, which is why I made an account here.

What do you mean by' the pile' ? Do you mean that there were loads of beautiful houses there? Or do you mean that there was a mountain of houses all stacked up on top of each other? Or, do you mean that there was a pile of houses just thrown on top of each other like on a rubbish heap? Unless this pile is /was actually a well-known tourist attraction lol, it would be 'a pile' not' the pile' (The article 'the' suggests the only pile in Paris!)
The word plle is more often used to describe lots of bricks eg: There was a pile of bricks in the corner next to the cement mixer, near the building site. The word pile could also be used to describe lots of plates stacked up eg There was a pile of dirty plates in the kitchen waiting to be washed.
I would say:
"when we were visiting Paris, we saw loads of beautiful old houses there.
= Cuando estábamos visitando París, vimos un montón (o una pila) de casas bonitas y antiguas allá.
o
Cuando estábamos visitando París, vimos un montón de (o muchas) casas hermosas y antiguas allá.
Although the word bella means beautiful, according to the guidance notes in the Spanish section of Oxford Spanish Dictionary this adjective is usually used to refer to women, poetry, or scenery. I am not sure that it is such a good (appropriate) choice here, alhough I am open to correction especially from Spanish natives!

Were you trying to say: 'We greatly enjoyed the journey'?
Nos divertimos mucho el viaje (preterite/simple past) = We really (o greatly) enjoyed the journey / We enjoyed the journey very much.
Nos hemos divertido mucho el viaje = We really enjoyed/We have really enjoyed the journey

Cuando visitábamos Paris vimos muchas casas hermosas y antiguas allá.This use of the imperfect is probably the correct way to form the sentence. Cuando visitábamos means when we were/was visiting.
