Lets say someone had white hair. You would say 'tienen el pelo blanco' right? Or do you somehow change the word blanco? Same with amarillo, negro, rojos and other colours. Do you somehow change them when describing ones hair or eyes?

Here is another one that will help. Hair color

Often a word will have several different translations and you need to choose the appropriate one based on context. For example: If you wanted to describe hair as, "brown", you can't say, "el cabello café. Café does mean, "brown", but is not used to describe hair color. Marrón, (dark brown) or castaño (chestnut-colored) are better choices.

And as a side point 'pelirrojo' is the term for a 'redhead'.
