My opinion:

Hacer las maletas is probably the most common I see.

Empacar (las maletas) is an alternative that may be more regional, and implies las maletas, so that part is not necessary.

Hacer el equipaje is another term I have seen.

There may be other things I haven't encountered.

Equipaje is luggage.

Maleta is suitcase.

Necesito hacer la maleta para mi viaje.

Necesito empacar para mi viaje.

When you are talking about packing your bag, use hacer la maleta; however, if you are talking about packing in general you can use empacar (intransitive verb).

I think you can use the verbs meter or hacer

1.Meter las cosas en la maleta (Sp) = to pack

ex: Metió algunas camisetas en su maleta y se fue = He packed (lit: put) some shirts into his suitcase and he left.

or

2 Hacer las maletas = to pack

ex: ¡Tengo que hacer las maletas, ahora! = I have to pack now!

In my Oxford Spanish Dictionary it lists the verb empacar (LAM) which as far I can understand means that it is used in Latin America
