Would I use the verb form 'estudian' of estudiar for los estudiantes?
Because los estudiantes is plural and means they.

Yes, the verb "estudiar" in the third person of plural (they) is "estudian", and "los estudiantes" is the third person of plural.
For example: Los estudiantes estudian en esta biblioteca.
