'Que tengas una buena noche' (informal)
'[Que] tenga una buena noche' (formal)
o
'Que pases una buena noche' (informal)
'[Que] pase una buena noche' (formal)
Your choice of informal vs. formal will depend on the relationship you have with the gentleman, modified by his cultural background (some Spanish speaking areas are much more formal than others).
