Durante mi vida academica siempre he estado inscrito/me he inscrito en cursos de economia
Can this be written like this:?
During my academic life I have always taken classes on the domain of economics

Kiro, If you use phrase "in the domain of" in this way it would be considered high register and seen mostly in reading and writing. Maybe something you would use in a curriculum vitae. In the spoken language it would sound a little odd and sound super formal. I think some more common and natural sounding options would be:
"I have always taken classes in the area/field of economics"
"I have always taken economics classes"
