"Echar" idioms
My question is, are echar idioms used in Latin American dialect? Like are try frequently used/understood? I ask because I learned that to say "to miss (someone)" in Spain could be "echar de menos", but in Latin America they use "extrañar". Are the other echar idioms used too in the americas?

There are plenty.
(vamos a) Echar unos tacos. (Let's) Go get/grab some tacos.
I've seen so many I can't begin to count or understand them all. It's a real hole in my knowledge. I have much to learn there.
There are a lot. If you put in "echar" in the dictionary here, you will find a whole long list of them.
Extrañar is certainly used in Spain as well as echar de menos. In fact I think both expressions are used in most Spanish speaking countries.

echar a andar ( to start to walk)
echar dientes ( to be teething)
echar raíces ( to put down roots)

Yes. They are used in Mexico, including echar de menos, although extrañar is more common. In fact there are so many echar uses that it boggles the mind. I find it to be one of the toughest verbs along with hacer idioms which are not intuitive at all.
